If a project from another chain chooses to use OPL and wants to use a gas relayer instead of paying the gas fee with the ROSE token, the token they choose to use will get auto converted to ROSE and that will cover the fee?

That this is correct, users won't have to pay with ROSE, but pays with whatever token that the dApp they're interacting with requires, the gas relayer converts it without the user having to use the native ROSE token.
